Introduction

Many of the traditional Swedish dishes are in our opinion often bordering on the inedible. Others are a little bit "special", like the Swedish pea-soup, made out of dried yellow peas, which earlier was served as dinner every Thursday during the winter season. Some recipies use ingredients that are difficult to come by outside Sweden, such as smoked heart of reindeer.

The present collection includes recipies for Swedish dishes that:

we find delicious

can be prepared from ingredients available also outside Sweden

are reasonably low in fat
